This is a delicious and hearty soup that allows you to use up whatever vegetables that you have on hand. The recipe below makes a HUGE pot! 6.5 quarts is a lot of soup, you can easily cut this recipe in half. The herbs and spices listed can also be modified. In fact, I use an organic seasoning from Costco that has many of these ingredients in it and I use a LOT of it. Vary your spices and herbs to suite your taste preferences. This is a basic recipe that can be modified in every way possible. Get creative. You can use Chicken or Beef bone broth or stock intstead of veggie stock if you prefer. This is a timeless classic. Hearty Vegetable Soup
Ingredients
- 1 Onion
- 5 Cloves Garlic
- 3 Quarts Vegetable stock
- 1 Head Cabbage (small) Can use a combination of green and red
- 3 Carrots diced
- 2 Zucchini
- 1 Can Stewed tomatoes (28oz)
- 1 tbls Salt
- 1 tbsp Black Pepper
- 1/2 Cup Kirkland Organic No-Salt Seasoning. If you have this seasoning from Costco, you do not have to add any of the remaining herbs and spies below. If you don't have this seasoning mix then just add the following ingredients below or whatever you have on hand. If you don't have one or two of these ingredients, it really is ok. You can also mix it up and add herbs and spices that suite your preferences.
- 1 tso Granulated onion
- 1 tsp Granulated garlic
- 1 tsp Red bell pepper powder
- 1 tsp Orange peel
- 1 tsp Parsley
- 1 Bay leaves
- 1 tsp Thyme
- 1 tsp Basil
- 1 tsp Celery powder
- 1 tsp Lemon peel
- 1 tsp Oregano
- 1 tsp Mustard seed
- 1 tsp Cumin
- 1 tsp Marjoram
- 1 tsp Corriander
- 1 tsp Cayenne
- 1 tsp Rosemary
Instructions
- Saute onions and gralic in 6.5 quart panAdd all other ingredientsCook until tender
